Brewing Update

Coopers Australian Pale AleWell. Yesterday we made the Australian Pale Ale and used the Brew Enhancer 2 as recommended by Coopers. It was so simple. It took me more time to write this blog entry than make the beer. This beer emulates the Coopers Pale Ale, the most popular beer that the brewery makes. It was very hot here so drop the fermenter in a cool bath to keep the initial fermentation temperature down. We checked the fermenter this morning and it frothing away. I can't wait to try it.

We have been doing a lot of international brewing this summer. We began the summer by brewing a Mexican Cerveza which was consumed very quickly and help us get through the hot summer. Then we made the European Lager which is still aging in a keg in our refrigerator. We did some product testing (work, work, work) to see how it's coming along. It is very yummy . As you can tell, our passport is getting quite full. Next stop Canada.

"@Bob I would force carbonate your beer instead of using the carbonation drops. How big is your keg? Standard Cornelius kegs are 5 gallons. This will leave about a gallon of extra beer to bottle. Use the carbonation drops in the bottles. If you want to naturally carb the beer in your keg, use about 1/4 cup of corn sugar (dextrose) boiled with a 1/4 cup of water. Add to keg first. Add the beer. Seal. Leave at room temperature for a week while the yeast produces CO2." Read more
