How to Brew – Easy

Basic Instructions for Brewing Beer with a Coopers Beer Kit

Step 1 – Mix

Using a pot capable of holding at least 6 quarts, bring 2 quarts of water to a boil, turn off heat, leaving pot on burner. Mix in your Coopers beer kit concentrate, and your additional fermentable sugar as called for on your can instructions, ensure syrup is fully dissolved, taking special care to run spoon over bottom of pot. Mix well, cover pot. Allow to cool until pot is cool to touch, an ice bath in the sink will help speed this up. Pour your liquid (referred to in professional beer making as “wort”) into a sanitized fermenter. Top up with cold water to the 23 liter mark and stir vigorously. Check the liquid crystal thermometer on the side of your fermenter. When the temperature is below 22’C (75’F) add the yeast, stir, then screw the lid of your fermenter down tightly and attach the airlock.

Step 2 – Brew

Although your Coopers beer kit concentrate can ferment at very high temperatures (as high as 22degC/75degF), the closer the brew is to 18degC (67degF) the cleaner the flavor and aroma. Allow it to ferment for 4 -12 days (based on temperature and airlock activity) until hydrometer readings are unchanging for at least two days.

Step 3 – Bottle

If your bottles are already clean, soak your bottles for 10-15 minutes in your sink with a solution of 1-2 gallons hot water (doesn’t have to be exact) and 1 TBS of Coopers Brewery Sanitizer. Rinse them well and put them upside down in your dishwasher to drain. Carefully place your fermenter on you kitchen counter near the dishwasher and attach your bottle filler to the fermenter. Once you are certain the bottle filler is firmly attached, open the spigot on the fermenter. The bottle filler should hold without leaking. Once your bottles have fully drained, remove one bottle, put in 1-2 Coopers Carbonation Drops (1 drop for 345-375ml and 2 Drops for 740-750ml) into the bottle and move the bottle up the filler. Once the valve on the filler touches the inside bottom of the bottle, your bottle will begin to fill. Just before the beer reaches the top of the bottle, move the bottle in a downward motion removing it from the bottle filler, then screw on the PET cap. Repeat this with each bottle until all are filled.

Step 4 – Enjoy

While we recommend leaving your bottles to condition at or above 18degC (67degF) for at least 2 weeks - you may find that your brew benefits from further conditioning. Your beer will be at its peak conditioning in 4-6 weeks.
